Cranberries always seem to make their way into our meals during the holiday months. I love the sweet tartness they can add to a dish, especially in salads. Recently on a Fall picnic we packed a tasty chicken orzo salad. The recipe included dried cranberries and caramelized pecans for a special twist. For an easy way to transport the orzo salad, I filled two small mason jars and topped them with a cute paper dollie. Tie on a wooden spoon with some decorative ribbon for a sweet touch. This is a great pasta salad dish for gatherings, or added into a meal package for new moms. Enjoy!
Chicken Orzo Salad
1 package of Orzo Pasta
2 C chopped chicken
2 tbsp Extra Virgin Olive Oil
¼ tsp black pepper
¼ tsp salt
1 ½ C dried cranberries
1 ½ C caramelized pecans
½ C fresh cilantro
1 C Balsamic Vinaigrette
- Cool the Orzo pasta according to package directions.
- Mix cooked Orzo with all listed ingredients chicken through cilantro.
- Add Balsamic Vinaigrette to taste.
