Pineapples are huge this year, and I just couldn’t resist jumping into summer with some sweet treats starring this super tasty fruit. These were very easy to make, fun, and a refreshing way to celebrate summer.
First, I made a simple vanilla cake. Feel free to use your favorite vanilla cake recipe. While the cake was baking, I took buttercream frosting and mixed it with yellow food coloring and pineapple juice. After the cake cooled, I frosted it with the pineapple flavored frosting. This was a great way to introduce kids to pineapple cakes in a subtle but delicious way. And for garnish, I cut the top off of a pineapple and placed it on top. So cute!
To accompany it, I made a Pineapple Limeade. This was so delicious and works well with both kids and adults. I made mine non-alcoholic, but you can add vodka to the adult glasses if you wish. I found some cute pineapple cups for the kids to use. For the adult glasses, I garnished them with pineapple chunks and a sprig of rosemary. Rosemary is definitely a unique choice to use to garnish pineapple drinks with. But it adds a wonderful accent to the tropical flavors that the pineapple and lime bring to the drink.
