If you are like me, it is often a huge effort just to get dinner on the table some nights. With all the pressure to eat clean and avoid processed foods, I was really excited when I discovered how easy it is to make refrigerator pickles.
With this recipe you don’t need any special equipment. In fact it is easy and they are so crunchy and delicious you will wonder why you ever purchased store bought pickles. Grab your quart Ball canning jars and follow the recipe below.
Ingredients:
2-3 pickling cucumbers
4 sprigs of fresh dill
5 cloves of garlic
3 Tbsp white distilled white vinegar
½ – 1 Tbsp pickling salt
Distilled water
¼ tsp red pepper flakes-optional I love a little kick
Directions
Cut pickles into discs, spears, or sandwich slices and add to the jar.
Add all ingredients except the water.
Fill with distilled water and screw on lid.
Shake the jar up to distribute flavors
Refrigerate for 4 days
Store in refrigerator and enjoy within a month for maximum freshness.
These make great after school snacks. My daughter loves them. They also can make great hostess gifts. Just tie on a homemade tag and tuck in a sprig of rosemary and I guarantee you people will love them.
